The first years that I visited New Orleans often the bean used for making Red Beans and Rice was a small red bean about half the size of Kidney beans. As the years passed Kidney Beans replaced the other beans. I remember going to Schwegemann's and they displayed beans and rice on an isle that was at least 18 ft. long with rice on shelves on one side and beans on the shelves opposite. What a store !!!!!!!!!!!!!!

I am the pickiest eater in the world, so I never imagined that I would marry someone who would not eat something that I would eat. But I managed to find someone who won't eat kidney beans. If it weren't for that I think that I would like this recipe (minus the green peppers).
